Helpful breakdown and interesting history. I’m curious to know more about William Banting and how he selected foods to cut out entirely — not just cut back on. I know nothing about the state of food knowledge in the 1860s. Off to read more…

The flip side of this is that we are so metabolically adaptable—able to process any number of foods to keep us alive. From that perspective, we can be more relaxed about the details.
